I’ll have to go with Cimorene from Dealing with Dragons. She’s a princess who puts her money where her mouth is after saying that she’d rather be eaten by a dragon than marry a particularly odious prince, and ends up getting hired as a chief cook and librarian instead. She also rescues princes and melts wizards.
